Ingredients:

  • Whole snapper
  • 2 tins of good Italian chopped tomatoes
  • 200g of capers
  • 200g of black Spanish olives
  • Fresh Basil
  • Fresh lemon slices

Method:

  • Dry the snapper, cover it in chopped tomatoes
  • Cover the fish and bake for 1 hour at 180°C
  • Remove from oven and top with capers, olives, fresh basil, and lemon slices for serving

Crispy potato salad with Prosciutto-wrapped SA Prawns

Ingredients:

  • 1.5kg potatoes
  • 300g baby spinach
  • 1/2 red onion
  • Handful of salted pistachios
  • Handful of dried cranberries
  • Fresh basil to serve

Dressing:

  • 3 tbsp Greek yoghurt
  • Juice of 1/2 lemon
  • 3 tsp Dijon mustard
  • Salt and pepper
  • Mix all together in a bowl

Method:

  • Preheat oven to 180°C
  • Boil potatoes until soft
  • Smash potatoes on a tray and cover with olive oil and butter
  • Put in the oven and bake until crispy
  • In  a bowl, combine baby spinach, red onion, salted pistachios, and dried cranberries
  • Mix potatoes and pre-mixed dressing together

Cocktail sauce for the seafood platter

  • 300ml tub of Greek yoghurt
  • 100ml of tomato sauce — enough sauce to give it a really nice pink colour
  • Dash of Tabasco
  • Dash of Worcestershire sauce
  • Mix together and serve with your fresh SA seafood platter
