Lauren’s Chicken Rosé Pasta

Ingredients
  • 1 x pack of pasta (your choice what shape!)
  • 1 brown onion, finely diced
  • 3 garlic cloves, crushed
  • 2 x chicken breasts, diced
  • Bacon, diced
  • Sun-dried tomatoes in oil
  • Broccoli, cut into small florets
  • 1 bottle passata
  • Baby spinach
  • Light cream
  • Fresh basil
  • Grated Parmesan
Method

Cook the pasta according to packet instructions. Drain and set aside.

Heat the oil from the sun-dried tomatoes in a large frying pan. Cook the onion and garlic until fragrant.

Add the chicken and bacon and cook until chicken is lightly browned and bacon is slightly crispy.

Stir through the sun-dried tomatoes, broccoli and passata.

Simmer until the chicken is cooked through and the broccoli is tender.

Add a drizzle of light cream, stir through the spinach until wilted.

Remove from the heat and add fresh basil, Parmesan, and the cooked pasta and toss until well coated.

Serve with extra basil and Parmesan.

Honey Pepper Pork with Crispy Potatoes & Apple Slaw

Ingredients
  • Little Meat Co. Honey Pepper Pork Scotch Fillets x 4
  • 4 potatoes, cut into wedges
  • Olive oil
  • Salt
  • 1 apple, julienned
  • Cabbage, shredded
  • Mayonnaise
  • Apple cider vinegar
  • Rocket
  • Salt and pepper
Method

Preheat the oven to 200°C.

Toss the potato wedges with olive oil and salt, then bake for around 40 minutes or until golden.

Combine the apple, cabbage, mayonnaise, apple cider vinegar, rocket, salt and pepper to make the slaw.

Heat a frying pan over high heat. Cook the pork, turning once, until golden and cooked through. Remove from heat and rest for 5 minutes.

Serve the pork with the crispy potatoes and apple slaw.

Maple Pork One Pan Dinner

Ingredients
  • 2 Little Meat Co. Maple Pork fillets
  • 2 sweet potatoes, diced
  • 4 carrots, halved
  • Red onion, sliced
  • 1 pack brussels sprouts
  • 2 apples, diced
  • Olive oil
Method

Preheat the oven to 200°C.

Toss the sweet potato, carrots, onion, brussels sprouts and apple in olive oil and then spread out onto a large baking tray.

Roast for 20 minutes, then remove from the oven and nestle the pork among the vegetables.

Return to the oven and cook according to the packet instructions until the pork is cooked through.

Slice the pork and serve with the roasted vegetables.

Cheat’s Chicken Sliders

Ingredients
  • 6 bread rolls
  • 1/2 a rotisserie chicken, shredded
  • Cheese slices or grated cheese
  • Coleslaw
  • Garlic aioli
  • Olive oil
Method

Preheat the oven.

Slice the rolls in half (while keeping them connected) and place the halves open on a baking tray.

Drizzle one side with olive oil. On the other side, top with shredded chicken and cover in cheese.

Bake until the cheese has melted and the chicken is heated through.

Remove from the oven and top with coleslaw and garlic aioli.

Place the tops back on the rolls and slice into individual sliders.

Greek Meatball Bowls

Ingredients
  • 2 packets Little Meat Co. Beef & Pork Meatballs
  • 1 pack of microwavable brown rice, or make your own
  • 1 cucumber, diced
  • 1 green capsicum, diced
  • 4 tomatoes, diced
  • Olives
  • Tzatziki
  • Feta – measure with your heart!
Method

Cook the meatballs in the air fryer, shaking occasionally, until browned and cooked through.

Heat the rice according to the packet instructions.

Divide the rice between bowls.

Top with the meatballs, cucumber, capsicum, tomato and olives. Spoon over the tzatziki.

Finish with crumbled feta and serve.
