One Tray Chicken Orecchiette Pasta Bake
Recipe: Edie Noble | Serves 6-8
Hearty and full of flavour, this is a great meal prep option! Get it made and pack it into containers throughout the week. It’s great to eat cold, too!
Equipment:
- 1 x deep baking tray
Ingredients:

2x 500g packs Olga’s Fine Foods Gourmet Chicken Yiros meat

1x 500g pack Orecchiette
-
1 Lt Chicken stock/stock powder
- 2 x carrots (finely chopped)
-
1 x onion (finely chopped)
-
4 x celery sticks (finely chopped)
- 100g grated Pecorino or Parmigiano
-
1x sliced chilli
-
8x sliced garlic cloves
Method:

Preheat oven to 200°c fan, with the baking tray in the oven.

Dice all vegetables.

After 10 mins, remove the baking tray from the oven and add in Chicken Yiros meat.

Add in all your other ingredients and give it a really good mix.
- Cover tightly with foil.

Place back in the oven for 35-40 mins.

Once cooked, allow to rest for 5-10 mins.

Grate over the cheese and serve.

Beef Arayes

These are great starters! But you can also have one each as your main meal, and get creative with the fillings!
Ingredients:

2x pack Olga’s Fine Foods Beef Chevaps
-
4x large Pita bread
-
2x red onions (sliced)
- Sumac
-
White wine vinegar
-
1/2 a red cabbage (shaved)
- 300gms Greek yoghurt (we used The Yoghurt Shop)

Fresh herbs to garnish (we used mint & dill)
Method:
Sumac red onions:

Thinly slice your red onions, add 1⁄2 tsp of sumac, a pinch of salt and a dash of vinegar.
- Massage into the onions and set aside.
Beef pita:
-
In a bowl, crush up your beef chevaps back into a mince.

Lay your pita out and spread (using your hands) a 5mm thick layer of the minced meat.
- Place your frying pan on a medium heat.

Once you’ve beefed all your pita, you can start cooking.

Add a dash of olive oil to your pan and place the pita, mince side down.

Allow to cook for 4-5 mins, and then turn over.
- Allow to cook on the bread side for 1-2 mins to colour slightly
- Fill with all the other ingredients, starting with the yogurt and building up with the fresh items.
- Either cut into wedges or roll up to enjoy as a wrap or yiros!
