An epic summer/Christmas recipe. There’s no limit to the imagination here on what you can top the Christmas pavlova with! Get the kids involved in the decorating and try to save some Quinzi’s chocolates for the end of the recipe. Ingredients:

Pavlova:

  • 5x egg whites
  • 1 cup fine castor sugar
  • 1 tbsp corn flour
  • 1 tbsp white vinegar

Cream:

  • 300ml thickened cream
  • 50g castor sugar
  • 1x vanilla pod or 1 tsp vanilla essence

Toppings:

  • 3x flavours of your favourite Quinzi sweets
  • 1x jar Beerenberg lemon curd
  • 3x varieties of seasonal fruit (mangoes, strawberries, passion fruit, raspberries)

Method

Pavlova:

  • Preheat oven 10 180°C fan forced
  • Place whites in the bowl of a stand mixer.
  • Put on a medium to high speed and allow to come to medium peaks (3-4 mins)
  • Once at medium peaks, add in sugar, one tablespoon at a time.
  • Once all the sugar has been added, add in the vinegar and corn flour (this is to help stabilise the meringue).
  • Spread on a baking tray lined with baking paper, slightly smaller and higher than you would like, as it will drop and spread out as it cooks.
  • Gently, very gently, place the pav in your oven, close the door and turn the oven down to 115°C.
  • Allow to cook for 90 mins.
  • After 90 mins, turn the oven off and don’t touch! Let it cool in the oven for 4+ hours. (This will help avoid it cracking and sinking)
  • After 4 hours, take the pav out and allow it to cool completely on the countertop.
  • Meanwhile, get the cream whipped and fruit prepped.
  • Add your cream, sugar and vanilla to a bowl and whisk till medium peaks.
  • Prepare your fruit.

Build the pav:

  • Gently lift the pav onto your serving plate.
  • Smear the whipped cream across the top of the pav.
  • Arrange all of your fruit on top of the pav (spooning out the passion fruit if you’re using them)
  • Dollop the lemon curd around randomly.
  • And lastly, scatter your Quinzi chocolates around generously.
  • Enjoy!

Notes:

  • You can prep the pav itself the day prior, and get all the other items prepped into containers too, so come Christmas day, all you need to do is build!
